We carry two of their premier chicken lines: Naked Chicken and Poulet Rouge Fermier. Both represent the highest standards in poultry production, with strict protocols for animal welfare, natural diets, and superior processing methods.
Poulet Rouge Fermier is a heritage breed chicken with roots in France’s renowned Label Rouge program. Joyce Farms is the exclusive breeder of this variety for the entire North American continent. French in origin, these thin-skinned birds require expert handling and specialized growing conditions to reach their full potential.
For the first six weeks, Poulet Rouge chickens are kept in temperature and humidity-controlled barns. After this period, they move to open pastures where they roam freely and forage naturally. The birds reach full maturity at 84 days, roughly twice as long as conventional chickens. This slow growth allows intramuscular fat to develop, producing juicier, more flavorful meat with superior texture.
