Wagyu, meaning “Japanese cattle,” refers to breeds genetically predisposed to intense marbling. What began in Japan has expanded worldwide, with Australia and the United States developing their own Wagyu programs. Each origin offers distinct characteristics for different menu applications and price points.
Japanese Wagyu is graded on two scales: yield (A, B, or C) and quality (1 through 5). A5 represents the highest grade, with quality scores measuring marbling, color, firmness, and fat quality. Within A5, marbling is further measured on the Beef Marbling Score (BMS) scale of 1 to 12, with most A5 cuts scoring BMS 8 or higher.
Our A5 Japanese Wagyu comes from respected prefectures including Miyazaki, Kagoshima, Gunma, and Hokkaido. Each animal is traceable to its source.
Best for: Special occasion menus, omakase experiences, premium tasting portions. Typically served in 4 to 6 ounce portions due to richness.
Australia has developed a world-class Wagyu industry using the AUS-MEAT marbling scale (MS0 to MS9+). Australian Wagyu at MS8 to MS9+ rivals Japanese A5 in marbling while offering a slightly more robust beef flavor profile. Both fullblood (100% Wagyu genetics) and crossbred programs are available.
Best for: Upscale steakhouse programs, premium burger blends, operators seeking Wagyu quality with more versatile portion sizes and price points.
American Wagyu typically crosses Japanese Wagyu genetics with Black Angus, combining Wagyu marbling with the familiar beef flavor American diners expect. Most American Wagyu grades above USDA Prime, with BMS scores typically ranging from 6 to 9.
Best for: Premium everyday offerings, operators who want to elevate their steak program without the price point of Japanese A5. Approachable luxury that delivers on the Wagyu promise.
